This native grape variety grows in vineyards with South-East exposure, at an altitude of 140 m above sea level and clay type of soil. It is harvested manually, in the middle of September, followed by fermentation in stainless steel vats for 18 days with manual pressing, with no additional yeasts. 60% of the Refosco is then aged in new barriques and the remaining 40% in barriques that have been used once, for a duration of 12 months plus an additional 12 months in large oak casks and 6 to 8 months in stainless steel casks for natural racking. The wine is not filtered before bottling and has a longevity of over 12 years.
